Roasted Corn Guacamole

Ingrid once said, “if I had to eat only one food for the rest of my life, it would be avocado”.  I agree.  I think most of us have probably made this unnecessary decision of selecting the one food item you could eat for the rest of your existence… Guacamole makes everything better and the roasted corn adds a unique and delicious flavor!

Roasted Corn Guacamole

  • 2 Ripe Avocados
  • 2 tomatoes
  • handful of cilantro
  • 1 lime
  • 2 green onions
  • 1/2 bag of Trader Joe’s Roasted Corn
  • salt & pepper

Peel and mash two avocados.  Dice tomatoes, green onions and cilantro.  Blend avocado with tomatoes, onion, and cilantro.  Mix in roasted corn and the juice of one lime.   Add salt & pepper to taste.

Children’s Park Bench

A few times a month, our favorite thrift shop will discount its furniture by 50%. It was on one of these special occasions that we came across this adorable children’s park bench. The size caught our attention and we fell in love with the animal detail on the back. The bench needed some repair- the wood was greying and begged for some luster.  We unscrewed each wooden plank and sanded, revealing the surprisingly great condition of each piece.  Using Rustoleum wood stain, we layered a new look onto each plank.  With the plastic animal backing now separate from the bench, we coated it with a yellow Valspar spray paint.

Now, if only we could get our hands on a bit of Alice’s shrinking potion……

Lentils for lunch

Loaded with protein and fiber, lentils are not only a healthy meal option–but a tasty one too!  Growing up, our mom prepared lentil soup during the chilly months; however, we’ve managed to enhance their flavor with our own special recipe.  With steamed lentils from Trader Joe’s and an array of vegetables, lunch is served.

Lentil & Veggie Medley

Heat 1 tablespoon of grape seed oil over medium heat. Chop carrots, red onion, zucchini, squash and bok choy and add to preheated pan. Saute vegetables and add prepared lentils. Heat thoroughly.

*If you’d like a little spice (and added nutritional value) sprinkle cayenne pepper while sauteing vegetables.

From Green To Glam: Patio Chairs Reinvented

The brightness of summer is slowly fading. With school zones flashing away and stores beginning to stock their pumpkins (a bit prematurely, in our opinion), we bid farewell to the long summer days.  In Texas, however, it’s patio season most of the year.  When the weather is bearable, we love being outdoors—on the covered patio, in the garden, or recently, in Ingrid’s new hammock!  Right around this time, the patio furniture starts to go on clearance.  Unless we find an absolute steal, we still love sticking to our trusty thrift stores!  These green chairs were crying out for help when we spotted them.  They begged us to take them home and promised to look beautiful after a bit of cleaning and paint.  They definitely did not disappoint!

Reinventing Rubbish

When it comes to making someone else’s trash into our treasures, we are definitely not shy.  Our city offers a “bulky trash pick up” once a year.  Creeping slowly through the neighborhood during this time makes us feel a little like Joe Pesci & Daniel Stern in Home Alone.  We’ve stumbled upon some great finds, including a neat suitcase (circa 1970) that still waits patiently for us in the garage.  This time, we discovered these adorable terracotta planters hiding underneath some old wood.  They definitely needed some work but we immediately saw the potential.  With a little sand paper, soapy water, and a brush, these planters have been given a second chance….terracotta pots 1
